This cake was so fun to make. I am a Mario fan myself, so creating a race track from Super Mario Kart for my son's birthday was very exciting. Everything on this cake was edible except for the characters. The cake is dutch chocolate with butter cream filling on the bottom tier and classic white birthday cake with butter cream filling on the top tier. Both are covered in marshmallow fondant.
